gardening and Cilantro lime chicken (yum)

Well, summer is finally here. The rain has stopped for a short time and the heat is coming in quickly but I was able to get my plants in the garden.  Now it is  just a waiting game for the delicious produce to grow. With all the rain we have had lately we haven’t been able to cook on the grill as much as we would like. I did however try a new recipe in the crock-pot that was D…delicious. It was Cilantro Lime Chicken.  If you do not care much for cilantro you may want to pass this one up. I for one love the taste of it and thought it went well with the chicken and lime. I included the recipe below.

With the warmer weather coming I have noticed I am not getting enough water in each day. As the temperature rises it is even more important to drink plenty of water to keep us hydrated and feeling our best. Thirst can sometimes masquerade as hunger and when on a journey which includes weight-loss I need to remember to drink all of my water. I am happy to report I did lose a pound this past week but do feel the lack of water affected my overall weight loss.

The plan for this week is to make sure I get the correct amount of water in and then some. I am curious as to how this will factor in with the weight loss next week. I will keep you posted. :)

Cilantro Lime Chicken

Ingredients
  • 6 pounds chicken breasts
  • 1 cup shredded or grated parmesan cheese
  • 10 cloves garlic, minced (we like lots—you can use less if you prefer)
  • 1 cup chicken broth
  • 4 Tablespoons lime juice (we use about 3 limes)
  • 2 Tablespoons lime zest (shred the outside of a clean, fresh lime)
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 teaspoons garlic powder
  • 2 cups fresh cilantro leaves (remove leaves from stems)
  • 1 frozen bag of peppers/onion mix
 
I put all of the ingredients in my crock pot and turned it on low to cook for the afternoon.

WOW, have things been hectic in my life lately. Work has been VERY, VERY stressful with unfortunately no end in sight. I have made sure my daily regimen includes an extra dose of B vitamins (the happy vitamins) :) but even they are having a hard time keeping up with the stress. What all this stress means for someone who uses food as a comfort is…BAD NEWS!!! I have tried very hard to not let all of the stress build up and to remain focused on my journey; unfortunately there have been some downfalls.

This past week however was not one of them. My son had his first job interview and was offered a job for the summer working at Arby’s. He was pretty proud of himself and
thought we should celebrate his new job offer. Of course his favorite place for a celebration treat is the Dairy Queen.

I told him sure we could go and have a celebratory treat at the Dairy Queen, who doesn’t want to celebrate with ice cream. While on the drive there I was thinking of all the delicious options for treats in my head. As we stopped in the parking lot I made my decision.

The decision was however not an Oreo® blizzard but rather to have NO ice cream at all!

I just bought one ice cream treat for my son. It may seem like a small step but I was pretty happy with myself on making that decision.

I did have ONE taste of his ice cream, but that was it, just one bite!

So as I continue on this journey it may seem that the backwards steps are constantly happening. I know in my heart I am still moving forward, slow as it may be. I firmly believe that one day it will be 2 steps forward for each step backwards. Starting with just saying no to a tasty Dairy Queen treat!!!
